Cauliflowers are plants that reach about 0.5 metre (1.5 feet) tall and bear large rounded leaves that resemble collards. As desired for food, the terminal cluster forms a firm, succulent “curd,” or head, that is an immature inflorescence (cluster of flowers). The broad leaves extend far above the curd and are often tied together before harvest to shade the curd and prevent discoloration.Planting instructions: In warm zones, plant cauliflower in the fall for an early spring crop and in colder zones plant indoors in early spring or outdoors in late summer for the fall harvest. Indoors, sow seeds 6 weeks before the last expected frost in peat pots filled with soil very rich in organic matter. It is important to use clean tools. Place the pots on a 70 F (20 C) warming tray on a sunny windowsill. Keep the soil moist, but not soggy. After several sets of true leaves appear prepare plants for transplanting by harden them off; set the pots outside for a few hours each day, increasing time each next day. Transplant the peat pots to not disturb the tender roots, into well-drained soil in a sunny area at least 24 inches (60 cm) apart. Do this during a cool time of the day. Water once a week and don’t let the soil dry out. Outdoors, plant the seeds 2 to 3 months before the first frost date in rich in organic matter soil. Be aware that cauliflower prefers consistent and cool weather around 60°F (15 С); in hot weather the plant won’t produce full crops.
